How to Bake a Cake with Very Few Ingredients

Water Cake Recipe

We know that many of you are staying at home right now - making it the best time to take on baking projects! However, it’s not exactly the world’s best time for ingredients or quick trips to the store.

Enter: Water Cake

We like water cake because it’s one of those easy cake recipes that comes together in a snap and is incredibly versatile. Swap the water for orange or lemon juice (or use a combination) for extra flavor. Alternatively, you can add cocoa powder, cinnamon and baking spices, a pinch of cardamom… the list goes on!

Most importantly, this recipe creates a lovely, fluffy sponge cake without eggs (because they may be hard to find right now) or butter (because the flippin’ store only had salted butter).

You can certainly add icing to your water cake, make a layer cake, and decorate it how you like. We, however, prefer the simplicity of a good dusting of powdered sugar.

Ingredients

  • 2 C All-Purpose Flour

  • 3 tsp baking powder

  • 1/3 C cocoa powder (optional)

  • 2/3 C granulated sugar

  • 1 C water

  • 1/4 C vegetable, melted coconut oil or even olive oil

  • 1 tsp vanilla

  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 325 F.

  2. Sift the flour, baking powder and cocoa powder (if using) together in a large mixing bowl.

  3. Combine the sugar and water and stir well until the sugar is dissolved. Add the oil.

  4. Add the liquid mixture to the flour and baking powder and mix (using a hand mixer, stand mixer or by hand) until combined.

  5. Grease a round pan with cooking spray or a thin layer of more oil.

  6. Bake the cake for about 30 minutes, until a toothpick inserted in the center comes out dry.

  7. Let the cake cool, and then dust the top with powdered sugar.
