How to Make Cookie Ice Cream Sandwiches That Don't Fall Apart

Making ice cream sandwiches with your favorite cookie as “the bun” is one of summer’s special treats! They are so adaptable - you can make your own cookies, make your own ice cream (if you dare), or use store-bought cookies and ice cream but still look like you worked really hard creating a dessert.

No matter how you do it, mixing and matching cookie and ice cream combinations is a lot of fun and makes an awesome food craft for kiddos that may be bored sitting at home.

There are, however, a couple of rules to maximize your ice cream cookie sandwich experience. You can’t, after all, just slap some ice cream in between two cookies and expect the inside not to melt as you’re trying to eat it. Here are a couple of tips for the perfect ice cream cookie sandwich!

  1. Freeze the cookies in one layer on a sheet pan before assembling. This will keep the ice cream from melting into the cookie.

  2. Make sure the ice cream is straight from the freezer, not soft from sitting out. The firmer the ice cream, the easier it will be to shape it and hold that shape.

  3. Once they are assembled, freeze the sandwiches on a sheet pan in one layer until frozen through. (At least 4 hours, preferably overnight.)

  4. Once frozen, they will keep well in the freezer for up to about a month or so!

Taking the time to go through all the steps of freezing the cookies, then the sandwiches themselves makes all the difference! As you eat this sweet summer treat, the cookie and the ice cream thaw at similar rates and it’s a little easier to eat the whole thing before it melts.

It’s also nice to stay thoughtful with your ice cream and cookie combination. Generally speaking, if one element is more elaborate (think monster cookies or Rocky Road), keep the other piece of the sandwich plainer so flavors don’t compete.
